Ashwini Wagle, Ed.D, MS, RD is a Professor and the Department Chairperson for the Department of Nutrition, Food Science and Packaging at San Jose State University. She has worked for over twenty years as an educator and also has over ten years of experience as a registered dietitian nutritionist (RDN) in skilled nursing facilities and acute care hospitals in the San Francisco Bay Area.

South Asian dietary practices and habits make up for a complex cuisine that varies from different regions and states throughout the Indian Sub-continent. The cuisine is also influenced by religion which dictates food restrictions, and whether the diet is vegetarian or non-vegetarian.
